Nấm sau khi thu hái cần chú ý cách bảo quản nếu ăn ngay hoặc chế biến, nếu sử dụng dần hoặc xuất bán cho tiêu dùng và xuất khẩu thì nấm cần được bảo quản trong tủ lạnh hoặc các phòng lạnh. Việc này rất quan trọng vì hàm lượng đạm của nấm cao dễ bị hư hỏng hơn mà sau khi thu hái quả thể, nấm vẫn tiếp tục hô hấp, chuyển hóa làm giảm phẩm chất nấm.

1. Nguyên liệu bảo quản nấm tươi

Dùng nấm không già, không bị xây xát, dập nát. Giảm bớt lượng nước trong nấm, hạ bớt nhiệt độ môi trường. Nhiệt độ bảo quản nấm tươi thích hợp từ 2-5 độ C, riêng nấm rơm không bảo quản dưới 15 độ C.

2. Cách bảo quản tươi và sử dụng nấm tươi.

Bảo quản lạnh: sau khi thu hái, cắt chân, loại bỏ tạp chất, đưa nấm vào khay, túi. Bảo quản trong tủ lạnh ở nhiệt độ 2-5 độ C được 5-7 ngày.

Bảo quản để ăn tươi đơn giản: cho nấm vào nước đun sôi cho tới khi nước sôi lai thì vớt ra, ngâm vào nước lạnh cho tới khi nấm mát như nước thì cho vào túi nilon hoặc khay, đổ xâm xấp nước bảo quản trong tủ lạnh dùng dần.

Sử dụng: Chần nấm (thả vào nước sôi khoảng 2 phút rồi vớt ra ngâm trong nước lạnh), để cho nấm rắn chắc, hết mùi ngái. Sau đó vớt nấm ra để xào, nấu và chế biến các món ăn.
Cần chú ý là nấm có nhiều đạm nên khi chế biến không nên cho mì chính, chỉ dùng rất ít thịt, không ăn quá 2 lạng nấm/người/ngày vì dễ bị đầy bụng, khó tiêu.
